A compliant contract carries five living documents: the FSSAI licence for the kitchen premises, monthly EPF and ESIC challans for every deployed person, a wage register matching the Minimum Wages Act notification for Maharashtra, a pest-control schedule with service reports, and water-potability test results.
Ask for it monthly, not annually
The single most useful clause you can add to a canteen contract is a monthly compliance pack, due by the tenth, with non-submission tied to payment. Vendors who maintain their records find it trivial. Vendors who do not will negotiate hard against it — which tells you everything.
